Serves 6-8:
What’s a BBQ without the potato salad?! Great side for burgers.
Ingredients:
- 2lbs baby potatoes, diced
- 2 tbsp Three Farmers camelina oil
- 1 cup real bacon bits
- ½ cup green onion, chopped
- 1 red bell pepper, diced
Dressing:
- 1/2 cup mayo
- ¼ cup sour cream
- ¼ cup pickle juice
- 2 tbsp grainy dijon mustard
- Salt and pepper to taste
Instructions:
Toss the diced potatoes in the camelina oil and roast in the oven at 375 degrees F for 20-25 minutes until fork tender. Set aside to cool.
Whisk together dressing ingredients. Toss the potatoes, bacon bits, green onion and bell pepper with the dressing. Serve.
