Chickpea ‘Breaded’ Wings

Give this gluten-free breading recipe a try on your next batch of wings, pan fried fish or fried vegetables!



1 cup Three Farmers Roasted chickpeas (any flavour), ground fine

1/4 cup cornstarch

salt and pepper to taste


Grind up Three Farmers Roasted chickpeas in a coffee grinder or vitamix and then mix in the cornstarch and salt and pepper.

Dredge fish, chicken wings, pork, chicken breasts, etc with the coating. Heat up a generous amount of camelina oil on the stove top and pan fry or deep fry the items on med – high heat.

NOTE: smaller items like chicken wings and fish will be able to fry right through. Larger items such as chicken breast, chicken drumsticks, pork chop, etc. will need to finish in the oven at 350°F.

NOTE: This breading is great to use for fried vegetables as well (mushrooms, zucchini sticks, eggplant, etc). The only difference here is that you will need to dunk the vegetables in a light eggwash to ensure the coating sticks.

Whisk up 1 egg and 2-3 tbsp cold water. Evenly coat the vegetables with the egg wash and then dredge with the chickpea coating. Fry them up and serve with your favourite marinara sauce.
